Attiéké: The White Gold of the Lagoon Peoples — How a Dish Became World Heritage

Born in the lagoons of southern Côte d'Ivoire
Unlike many African superfoods that traveled from Asia or the Americas, attiéké is 100% Ivorian in origin. This fermented, steamed cassava semolina was invented by the lagoon peoples of southern Côte d'Ivoire: the Ebrié (or "Tchaman"), Adjoukrou, Avikam, Alladian, Abidji, Ahizi, and Attié. Its raw material, cassava, was introduced to West Africa in the 16th century by Portuguese traders — but it was in Côte d'Ivoire that the transformation into attiéké was invented.
An etymology that tells a scene from life
The story behind the name "attiéké" is a gem of oral tradition. Among the Avikam people, during shared meals, some would ask to keep some for the next day: "on tchêkê," meaning "set it aside." Among the Adjoukrou of Dabou, the name is said to come from a deformation of "Watchêkê" ("wait a moment"), spoken by a producer addressing an impatient colonial official. In both cases, "attiéké" is a Frenchified version of these popular expressions, now the official name of a national dish.
Dabou, Grand-Lahou, Jacqueville: the reference terroirs
Even today, certain regional names carry authority in the Ivorian market: attiéké from Dabou, attiéké from Grand-Lahou, and Agbodjama are renowned for their superior quality, the result of precise know-how in grain-forming and winnowing, passed down orally from mother to daughter within lagoon families.
A recognized world heritage
This ancestral know-how now represents around 450,000 tonnes per year and supports more than 100,000 people in Côte d'Ivoire. Its international recognition reached a historic milestone: in 2023, "attiéké des lagunes" was granted a protected geographical indication (PGI) by the African Intellectual Property Organization, and UNESCO inscribed "the know-how associated with making attiéké" on the Representative List of the Intangible Cultural Heritage of Humanity.
