The Invisible Weeks: What Happens Between Harvest and Packaging

Brand photography stops at the field. Farmers, sunlight, hands full of pods — and then the picture cuts to a finished pouch on a marble surface. Between those two images sit several weeks of unglamorous work that determine most of what ends up in the product.
The first twenty-four hours
Freshly harvested plant material is alive and full of water. Enzymes inside it continue working, breaking down the compounds you wanted to keep. Microbial growth begins on any damaged surface.
What happens in the first day is decisive. Material that gets spread out and begins drying promptly retains its character. Material that sits in a heap in the heat starts fermenting where it should not — and no later step reverses it.
Drying, which is where most quality is won or lost
Three approaches, three outcomes.
Shade drying on raised racks with good airflow. Slowest — several days to two weeks — and best for preserving colour and volatile aromatics. This is why properly shade-dried hibiscus stays deep crimson and properly dried moringa leaf stays vivid green.
Direct sun drying. Faster, and traditional for many crops. Effective, but UV degrades some pigments and vitamins, and material dried on bare ground picks up dust, soil contaminants and microbial load. Raised racks matter more than most people realise.
High-heat mechanical drying. Fastest and cheapest at scale. It also drives off volatile aromatics and degrades heat-sensitive compounds. Material dried this way looks acceptable and smells muted — which is exactly why aroma on opening is such a reliable consumer test.
Sorting
After drying, material is sorted: stems removed, discoloured or damaged pieces picked out, foreign matter cleared. Done properly it is slow, manual and expensive. Skipped or rushed, it is the reason a powder contains stem material and grit that nobody declared.
Storage before milling
Whole dried material is relatively stable. It is also where time accumulates. Stored well — sealed, dry, cool, off the ground, moving through stock rather than sitting — it holds. Stored badly in tropical humidity, it absorbs moisture, and moisture is what makes mould possible.
This is the stage where the bulk model does its damage. A year in a humid warehouse is a year of degradation that no label will mention.
Milling, and why timing is everything
Milling multiplies surface area, and surface area is what oxygen and moisture act on. The moment a plant becomes a powder, its degradation clock speeds up dramatically.
There is also a heat issue: high-speed industrial mills generate friction heat that can damage the material during grinding itself. Slower or cooled milling avoids this and costs more.
The correct sequence is: store whole, mill late, pack immediately. The cheap sequence is: mill in bulk, store powder, pack on demand. Same ingredients, different products.
Packing
The final protection. Opaque material blocks light. A moisture barrier keeps humidity out. A proper seal keeps oxygen out. Clear plastic with a simple fold-over closure fails on all three counts, and it is still common.
